This is lime brulee, I add kaffir lime leaves to the heated cream and to the eggs and sugar I added lime juice and zest, the rest is as for normal brulee. The cake is an flourless almond and cake, really dense and moist, I think it was a Bellinda Jeffery recipe.

Being still winter when I made these I had to use frozen raspberries but they were great anyway.
