Cheese cake...

Just your average New York cheese cake but I liked that the egg yolks were mixed in with the sugar, cream cheese and sour cream and then the egg whites were whipped up to soft peaks with some sugar and then folded into the whole mix before baking. It resulted in a much lighter cheese cake and great texture.

The recipe instructed I use a 28 inch pan but I only had 26 so it made for an extra high cake but it looked and tasted great.

Hi vida.

I am only a recent cheesecake convert. My Chai and Ginger one was a hit with the 18 y/o daughter and her friends a couple of months ago. But they did say it was rather "stodgy". I'll give this method a go!

cheers!

I can't remember the last time I had New York cheesecake - not readily available in Paris - and I am a fan of cheesecake.

Tara, I think with all the pastries you CAN get in Paris, you have nothing to complain about!! I think I would gladly give up cheesecake in favour of EVERYTHING wonderful in Paris, I think I would give it up just for the BREAD!!! And you well know, how much cake means to me!!! V x

Thanks Hannah, coming from an exceptional baker like you, I take that as the ultimate compliment. Wish I could present things better and I aim to purchase a camera better than the Aldi supermarket one I am currently using!!! Once all that is under control there will be no stopping me!! Vida x x x

It was very yummy, my daughter took the remainer to school and heard of the teachers whispering, let's not put that out and take it home, these old people won't appreciate it... my daughter thanked them for the compliment and they were rather embarrassed at their sneakiness... Vida x
